documents being saved to onedrive

right so ive just realised that ALL my DOCUMENTS even game save and MODS also how can i stop this and use my SSD/HDD to save or migrate these without it breaking

You can stop this by selecting another folder when you save your files, obviously. You can download all your Onedrive files and store them in your documents. However, I'd recommend having an online backup for important files in case your house burns down.

its done it automatically..... i didnt even realise till now......i dont want them to be stored in one drive at all

If you save any office file (word, excel, ppt) it saves automatically in 'my documents' within your OneDrive folders. Very annoying indeed. But you can log in to onedrive with your microsoft account and download everything as file or folder :)

In Euro truck simulator you can manually choose your save file. Just copy your file in your local documents and select the path in-game. In Steam/origin settings, you can choose where you want to install your games and save-files, so you should change that as well.

then like the last post said... Just unselect that folder.

*facepalms*  I'm being serious here you need to do some research on how onedrive works.  Get a basic understanding then come back.  Because if you don't know how folder sync works, then you don't have a basic understanding of storage.
