Doing a lot of video rendering on a different system and I need to upgrade it.

At Microcenter:

Intel Core I5-6600k: $199.99

Intel Xeon E3-1231v3: $209.99

 

The Xeon is basically an i7-4790 with a slightly lower clock speed (3.4-3.8GHZ) and has 4 more threads than the i5.

Even if I overclock the i5, what is going to get me faster times?

Xeon won in terms of bench marking. Only benchmark the xeon failed is integrated graphics.

I think you should compare this with the same generation but if you are really going for a video rendering I think going with the xeon e3-1231v3 will be a great option cause mobo compatibility is widely easy to find. I can not say about the e3-1230v5 mobo compatibility is going to be a hard time searching.
