Stuck between i5 6600, 6500, or possibly the i3 6100, want to save as much money as possible and prob won't do much gaming.

if you wont do much gaming, and the gaming that you do are easy to run games like LoL or cs:go, i would recomend the i3. if you somtimes play games like gta5, bf4 and othr older AAA games i would recommend the 6500 to save a few dollars

Mainly everday computer purposes, normal stuff, I don't think I'm gonna game, getting out of it

You could go even lower if you wanted and get just 4gb instead of 8. But I figure I'd just throw it out there anyways.
