First build

Hey guys I am wanting to custom build a workstation computer that can also do some gaming, my favorite game is witcher 3. I will be going back to college for digital animation and game design so I would like something to help with rendering within animation software along with being able to make video games with it. I want to focus on AI programing. My budget is $1000 and I would like to be able to run 3 monitors off of it. One is running off of vga another is running off of dvi and he last is running on hdmi. Currently my workstation is a dell workstation which has two exons and windows 10 plus a quadro with I think 8 gb of ddr3 ram. Give me your best options or options to upgrade my current rig. (side note one of the cpu's is on a riser card which connects to the mother board. my workstation is a 7500)

hmmm if we remove the hard drive because I have 3 1tbs I would like to bring over to this build would I be able to get more ram?

I mean, the real problem with that would be cost. And it'd be pretty costly.
