Hello, I'm going to do my first build in the next couple of months, and I'm going for a define s. Im doing air cooling at first then expanding to water cooling after i learn how to make a custom loop, so I was wandering the define s has 8/9 fan mounts but no fan controller, how the hell do i control the speed of the fans? build: http://pcpartpicker.com/list/NGpYHN

Either through your motherboard or through a fan controller you buy yourself.

BOINC Setup:
i5 7200U @ Stock

Core2Duo T6600 @ Stock

i3 2330M @ Stock

i5 3210M @ Stock

Just use your motherboard fan headers....

I have 8 fans (and a pump) hooked up directly to my mobo without any splitters or adapters. All are automatically controlled based on temperature and other factors without any intervention from myself ever.

Fan controllers are imho a waste of everyone's time and money. They don't work nearly as well as mobo controls do today and cable managing them is horrific (you wouldn't even notice from my front how many I have plugged in).
