If it does not require root previleges, then it's all ok. This is just a software, you can install what you want.

as far as i know installing a launcher is like installing an app, so it'd be a bit silly for that to void your warranty.

 

that said, my current preference is nova launcher, i had a different one for about a year, and then it suddenly started splurging popups to "try pro for free" which just installed 5 useless ad-ridden apps...

I doubt it voids your warranty, but realistically, how would they detect it anyways? Even though data is not removed from the flash memory at first, I'm pretty sure mobile operation systems use TRIM, which would remove any data marked as "free."
