I was wondering if you guys had any suggestions on my setup and would could this pc run? will it be able to run most games at 1080p on 144hz? also would any parts "bottleneck" each other? And would the cpu cooler come in the way of the ram? And could I overclock with my cpu cooler? or would I have to upgrade to liquid cooling?

Yes I may SLI in the future as well as having water cooling.

I agree with @TheSuspect.  I'd suggest getting a Samsung SSD.  An 850 PRO if it's going to be for your OS.  I'm pretty sure the pro models last longer than an EVO and are a bit faster.  Not to say an EVO wouldn't be good too just that the PRO is better for an OS drive imo.

Will definitely run 1080p games fine. It might not run all games at 144fps, but games like CS:GO will definitely hit 144+ fps. As for the build try a Samsung 850 Evo SSD. It's similarly priced, but faster. If the color (silver) isn't a problem with the color scheme I would buy it.

The GPU he has is completely fine and would easily be capable of running 1080p with 144fps +. It would be simply wasting money if he goes with the GTX 1080 because its actually significantly dearer than the 1070.
