If you must go back to the old version, you need to re-flash the stock ROM.

That's just one of the methods of restoring your phone. Another way is to restore to factory settings. If that doesn't work, you can always ask me about restoring the stock ROM.

It is technically stock already

What you need to do is go to Sammobile.com and search for your model and region then pick the android 5.1 FW and download it. Meanwhile download Odin and when it is done extract the Zip file from Sammobile and open Odin. Click AP and select the FW you downloaded. When it has loaded click start and let it flash. it will automatically reboot the phone but if you get stuck in a BootLoop you will have to factory reset the phone so make a backup of important data before you begin.

Edit: Get into download mode before you press start
