If I bought a screwdriver like so

Would it be able to unscrew all sizes of the same variation of screw? Meaning if I had screwdriver meant for unscrewing the "cross" screw would it be able to unscrew smaller sized cross screw?

You mean if you can use a single size of a Phillips head screw driver to unscrew/screw-in every sized Phillips head screw?  The answer is NO, because they come in different sizes and thickness of the notches.
