No, an i5 won't bottleneck it. The i3 might run into some issues in very CPU intensive games, but it should be fine.

I am just wondering if a i5-6500 will bottleneck a RX 480, if no, what about a i3-6100? thanks.

Just get the 6500. There will always be bottlenecking but what matters is to what degree. The 6500 will be fine with a 480.
