If you use an external mixer, you can set one mic as left channel and the other as right channel, and the mixer will take care of sending the audio to the computer as a single dual channel source.  Stereo mics are basically a single housing with two mic capsules inside.

 

But more mics does not equal better sound.  Knowing how to setup the mics, mixers, i.e. the audio chain properly equals better sound.

 

Additionally, just know that you can have the best mic in the world but Skype and other VOIP applications do not sample audio in quality such as 48khz 24-bit.  It's lower.

Yes.  Additionally you can try to mix both mics to be heard on both the left and right channels.  That's why you call it a "mixer".

 

I don't really know what the FocusRite Scarlett devices are capable of doing, but with my field recorder/mixer/interface (the Zoom F8) I can do a lot of things and even mix up to eight microphones.
