would it be worth it to step up my 1080 FE to there ACX 3.0 card? i know it has a better cooler on it which will mean lower temps but ive already achieved a good overclock on my FE card and not sure if the chip on the acx will yield same results

If you're happy with your card, keep it. If you like the new ACX cooler and RGB lighting, go for a step up. Or you can simply get an aftermarket solution and slap it on your FE edition for better temps like the NZXT AIO kit.

i would love to do that but i dont think my case would allow that. corsair 200R and currently i have it at 1807 core clock 2100 boost and 5508 memory clock. doesnt go above 80c though

Does it thermal throttle? If not, I don't think you should change it.

tops out at 80c doesnt get any hotter then that and i have temp limit at 92c so not even close to where it will start throttling

Better choice would be to wait a bit then find an ACX 3.0 cooler on ebay.  People sometimes sell them when they Watercool a card.

they easy to install?

It sounds like your 1080 overclocks quite well so I would probably leave it unless the noise level is bothersome.

Nah, your OC and thermals sound really good. i wouldn't mess with that. Seems like you have a solid chip on your hands.
