Problems when printing/creating PDF with language-specific characters

When I try to print characters ýáíéú they either disappear or are replaced with different characters. I'm running Arch.

This is my "locale -a"

This problem only appears when I'm running CUPS, when I try to create a PDF without cups running the characters remain unchanged.
