Yes. Transferring files works just like it would to a single drive. However, cloning the OS to a RAID 0 array can cause some issues. If you're planning on moving the OS to the RAID array, I would advise doing a clean install.

Is there a way I would be able to keep all of my files from both drives but put them onto one array?

If the array consists of new drives, then just create the array, then move your files over. It's cloning OS that can create issues. Moving normal files over is fine. 

I'd advise backing up your files to another drive before transferring them, though, just in case.
