As of the past few months, I've been really interested in BOINC, running it on everything from my main i7 2600k gaming rig to my Kindle Fire. I also haven't built in a while, and Linus' video about using old server parts struck a chord with me. This build would be running headless in a guest room, probably on Ubuntu, occasionally accessing it via TeamViewer to check and make sure everything is running okay. I'd like to try and keep the budget under 250 bucks, I have a NAS hard drive I can use for boot, as well as a Radeon 5970 that I'm not using, so having a board with a PCI-E x16 slot would be very nice. In addition, BOINC is very light on RAM, so I won't need anything more than 8GB. Which old Xeon seems to offer the most value when buying both the CPU and motherboard? Currently I'm looking between the LGA 1366 and LGA 1156 platforms. Also, I recently bought two Xeon E5520s for 8 bucks total because it seemed to be a good valuel only to later realize dual CPU 1366 boards are very expensive to come across. Should I ditch the idea of using those and just find some other xeons, or could I use those in any way?

I know this post is a little bit of a mess, but any help is very appreciated!
