New Multi-purpose Workstation Build

Hi everyone,
I am new to the servers, but I'll get right into why I came here in the first place. I am building a new system for a friend. She has given me the following requirements:

  • Budget: 1200 USD
  • Uses:
    • Video editing using Mirillis Action! ($50 license makes me think with won't be as intensive as something like Adobe)
    • Multi-hundred person Minecraft server
    • Gaming (Minecraft and other 3D titles)
  • She told me she wanted a core i9 which I intrepret as 'a really good CPU'

Case cosmetics are not a concern. I am only building the tower, but she has multi-monitor in mind. I have done a handful of builds in recent years, and have a background in electrical engineering and most other technical fields. My initial process has been as follows:

  1. Core i7-5820k (upgrade to Xeon in future?)
  2. 2011v3 motherboard
  3. At least one channel of higher-density DDR4, leaving room for expansion
  4. SSD: Windows and program files
  5. HDD 1: large, for media storage
  6. HDD 2: backup to HDD 1
  7. HDD 3: smaller, for server files
  8. HDD 4: backup to HDD 3
  9. Assess where I am in the budget, then allocate for PSU, case, GPU, and air cooling in that order.

Please let me know if I'm on target or if the budget is permissive. Things I want to learn more about are the upgrade to Xeon core, RAID, and how to handle the multitasking for which she's asking.
