I have a GTX 980 and I want to test to see if it is stable after an ESD incident. What testing software should I use and what settings? And while benchmarking is lag normal?

If the card cant run it then lag is normal, the ESD Incident will not cause damage, GPUs are very resistant against it now.

My current build - Ever Changing.

Use firestrike on a loop, or Unigene heaven, set all to loop and Extreme preset on heaven.
