Most games won't even touch the server. and there is no PCIe

They are sever hardware. If you can find an opteron board that has PCIe slots, USB header and enough sata port, it might be a good idea to build that.

Think about it this way...

 

There are five trucks. One of them is a super charged diesel semi with a 8150L engine. The other four are typical 6174L engines which are like a Chevy, Dodge, or Ford pickup. A warehouse needs to send eight cars to a dealer. They hire the semi to haul four at a time and the other pickups take one car each. Some of the pickup drivers drive a little faster and can make a second delivery if the dealer needs another car. So with the pickups the dealer can tell it's clients that they have at least 1 of the 4 truck's deliveries in and can sell that, whereas the semi can only deliver them as a whole.

 

So with 4 CPUs they can deliver a sample at multiple intervals, whereas a single high bandwidth CPU can only deliver a sample at one.

 

Can't be dumbed down any more than that.

Thanks for both of your help, so im assuming it would be an excellant worstation right?

It may be nice, but do you really need it? what are you going to be running?
