Im just wondering what you do think is best: One 2TB WD Blue (5400rpm) in no raid or two 1TB WD Blue (7200rpm) in raid 0?

What do you mean by "best"?

 

Speed? The two drives in RAID 0.

Data integrity/safety? A single 2TB drive.
