do you need 1 raid card for each raid or can I just use 1 for 2 raids?

Depends on the card, but normally you can run 2 or more RAID's on the card (i.e. Have 2 drives in RAID 1 and another 2 drive in RAID 0). it all depends on the card.

No. Just load the driver into your OS and you are good to go.

 

Just load up your OS on another drive and then setup the RAIDs.

 

Some controllers (most of them actually) will let you boot from them and configure the RAID when they initialise just after POSTing. If you do it this way you will need to load the driver during the windows install process (so you can actually see the Raid array to install to).
