I didn't want to use liquid cooling but you think it's the best choice?

That motherboard does not support the 5960x, you need something with 2011-3 socket, like Rampage V extreeme.

I like the case but can it fit 4ssd and 3hdd

Well for HDD both cases can house three of them but for the H440 if you plan to use the front for a rad you will need to find a solution to have them under the PSU shroud/cover. In the Define S it can house 3 HDD and has two extra slots of SSD's where you cans stick the extra drive on top with mounting tape. SSD's are much more flexible in where and how you can mount them compared to spinning HDD.
