what would be the gaming performance on sorround triple 1080p monitors with i5 4590 and r9 390?

also, do all games run in sorround?

Depends on the game. Bear in mind it is 3/4 of 4K, so have a look at 4K benchmarks, it will be a bit better than that. 

 

No. Most AAA games will support it, but some games will have issues with it (some games, like Skyrim, have UI scaling issues). Others may require you to use other software like SoftTH.

Its like Crossfire profiles, Hit or miss if a game plays in Eyefinity or not.

As above its 3/4 of the pixel count of 4K so add 1/4 fps and you will be about right in terms of FPS at that resolution.
