1680x1050 with an OC'd 4300 and a 270x <- maxing out pretty much anything I've played so far at 60+ fps (except Fallout 4 which runs at 30)

My 280x runs pretty much everything I've tried on 1680x1050 maxed... A 380 is approximately even with a 280x, so I'd say yes. Also, is there a reason you're going with the 380? used 280x cards are much cheaper used and even though they have 3GB vs 4GB frame buffers, at that resolution it won't make much of a difference. They are a bit more efficient though...

AsRock z77 Pro3, i5 3570K@4.6GHz, PNY GTX 1060 6GB, Lite-on 256 GB SSD, Acer 257HU 1440p monitor, Windows 10 Pro and Ubuntu 16.04. All in a weird OLD Lian Li case.

Well the 380 does have a larger frame buffer as you did mention and I'd like the card to run as long as possible and the heat from the less efficient older architecture of the 280x won't benefit it's longevity. I'm asking due to it being new and me not wanting to over spend on let's say a 290 if I won't really need the extra horsepower.
