ive only got 1 hdmi port on my gpu but im getting 2 hdmi monitors will using a dvi to hdmi cable affect quality?

Dvi is basically the same as hdmi just without audio.

DVI to HDMI adapters will still carry audio.

When you use a DVI or DisplayPort to HDMI adapter it just outputs the HDMI signal through the pins in your DVI/DP port. Neither is any better nor any worse than HDMI, they ARE HDMI.
