Can the OS language (N version) be changed/selected during/after installation without any 3rd party tools with these keys?

Actually it'll be the ISO that determines the language selection available. Depends on what ISO they provide for you to download. The N version is primarily for the EU, so I'd suspect you get to choose the language upon install.

Don't count on changing the language after installing though.

It's enough, so it's as "simple" as getting the iso of the desired version in the language I want?

Also I've an AIO installer, would that work too? (though IDK if it applies for N versions)

What exactly do you mean by "AIO" installer? Can you elaborate?

Yes, you just need to make sure the ISO you get has the language you want as an option. You can probably PM the seller and make sure before the sale. Just make sure that the ISO you get is compatible with your key (An N key may not necessarily work with a non-N ISO - I've never tried *shrugs*). The ISO the seller provides should be totally fine though - assuming they confirm it has the language you want.

Generally with the PRO versions, it asks you to select the language you want during the initial install steps. Whether the ISO contains more than one language to select from though, varies by ISO.

Thanks :)

Also I've and AIO (All in one) W7 iso, contains all W7 versions (also with 32 bit variants).

It works for normal versions, my last install was a fresh install in a compaq PC (though required a phone call confirmation, but doesn't bother me as here we've a free MS phone number)

I didn't see "n" versions on the list but I never fully scrolled down in the list
