I recently picked up and x58 system with an i7 970 seated on a asrock extreme 3 with no gpu and a cheap psu. It's running windows 7 professional on a WD Caviar Blue 300gb drive. Would this be adequate to perhaps run a server off of for gaming with my friends? Eg. Good, minecraft, battlefield 3, etc. I'm not sure what to do with it and any suggestion would be good.

Would it also be worthwhile to buy a cheap ssd and load Linux on it and run something off it like that? Again I don't know. Please keep the suggestions open and I appreciate all and any.

Server, yes. Minecraft servers love RAM if you do any mods, so, may need more if you only have 4Gb or so. 

 

Are you proficient in linux commands, or, do you have tons of time to mess with it? If no, just keep windows on it. 

 

an SSD will definately be helpful in the heat/power/sound/speed realm, both for the OS and servers. So yeah, I'd grab one. Just be sure to do backups often if running minecraft or other servers.
