Is there any adapters/hubs that will split a thunderbolt cable in to three display port ports?

Any standard DisplayPort MST hub will do, but only with a Thunderbolt 2 port. You can use a DisplayPort-to-Mini DisplayPort adapter to connect it to the Thunderbolt port if you need to.
