So in racing games i can have everything maxed out at 1080x1920 and get a constant 56FPS im happy with that but would rather 60fps, within shooter games eg bf3 i have to have the settings on medium/high to maintain 60fps in and out of firefights within the game, my question is would i benefit going to sli? I currently have a ASUS GTX 660 DCU2 OC

Would be better to just sell that card and get a 760 or something. One newer card is always better than SLI. with micro stutter and all that. Just sell that and get the best card you can afford and you will be good to go.

NO. Honestly you get very well achieved FPS. Don't SLI, if not just upgrade.
