Yes it should. CyanogenMod is very light weight, even lighter than LG's flavor of Android. Thus should run faster. This is similar to the reason a clean install of Windows will run faster than the one preloaded on a pre build Dell computer. The big pro of a custom ROM is that you can tailor your phone for you and add new functionality. The big cons are that it can be hard if you've never done it before, it will likely void your warranty, and you can brick your phone if you screw something up.

Personally, I found that rooting my G3 and removing all the bloat and changing to the Nova Launcher was enough to speed things up.

Will CyanogenMod or something similar increase the responsiveness of the UI on the phone.

 

For example the people complain about the UI lag on the LG G3 would installing CyanogenMod fix this issue?

 

What are some other pros/cons of using custom ROMs?

CM is usually about stock Android packed with a bunch of additional features, IMO it's not the fastest, but it usually comes packed with features like a theming engine, gestures, etc.
