for my main OS storage I am wondering what size I need. the recommendation was 40GB according to microsofts website but I am wondering if I need more. have anyone build a server and can give me a recommendation based on experience.

You would know what you plan to use the server for, we don't. If it's just room for the OS, ~20GB should be all it uses so 40GB is more than enough with updates. My only 2008 VM is using 16gb.

I used to have a 40GB ssd for my Windows Server 2008 R2 with some basic services and 1 VM I could easily fill 40GB and was constantly running out of space. I would really recommend if you're wanting to use any features like IIS or Hyper-V (with data/VM on the same disk) that you do go with something at least a little bit bigger, say 60-80GB.
