What Display Configuration?

Hey everyone! I plan to get new monitors soon and I am stuck in between one big 27" monitor for gaming and two 24" monitors on the side, or just three 24" monitors so they match and it allows me to do Nvidia Surround. I feel like I should include what I do on my computer, which is mainly gaming and video editing. Thank you and cheers!  :D
