Intel Based Build for Gaming

I want to get an Intel based build and compare it with an AMD build. My preferences are an i7 because it needs to edit/render/record well because I will be recording gameplay. The CPU might not get overclocked but I would like the option to do that. I prefer the R9 290 but if you can find a Nvidia card just as good or better for about the same price that is fine. The total budget is $1200. Has to have 8 gb of ram and 120 gb of SSD for Windows (I have Windows). The keyboard and mouse are apart of the total $1200. I will be using 1 monitor for now but plan to get a second one soon. I want the availability of SLI/Crossfire. I need an optical drive. I think that is it for specifications so please help me get a build no more than $1200. (The case fans don't have to be bought right away I can get those soon after building the PC but if you can find better for the price, the 2 sets are a dual pack, please add that in there and if you do that can make the price over $1200 but if it is it won't be bought right away)

The Xeon 1231 is a quad core CPU with hyper threading, basically a locked i7 except no iGPU but with more cache. However, if you really want to push it to the limit and get max performance for your budget, you can do this:

Thank you all for the help. Lotus I personally like your second build the best but I will remove the Crossfire for now because I have to fit my mouse and keyboard in there, unless that would change what you would put in there. If anyone else has something please put it here so I can check it out. Thanks.
