95% sure that cpu will bottleneck that gpu more than 80% of the time.

Most quad intel xeons are pretty much I7's without Igpus, so they'll perform just as well in that case. Plus with DX12 coming out, more threads = more performance. Since this xeon has hyper threading plus 4 cores, not only should it perform well in gaming now and in DX12, it'll be more than adiquate for video editing.

It'll be fine. An OC will help alleviate most issues arising from the old warhorse.
