RAID Help

I need help with RAID. I bought 2 Sandisk Ultra 2 240GB SSDs and I want to run them in RAID 0 to have really fast read and write times for my boot drive. My question is can I have my 2 SSDs in RAID 0 but have a 500 GB HDD configured to mirror my 2 SSDs that are in RAID 0. Basically having RAID 1 Protecting RAID 0. Or once its running in RAID 0 would it be easier to create a software RAID 1 in windows 8.1 using the mirroring option in Disk Management?
