My dad bought something that looks similar to that. It was meh. Not really worth the price. 

 

Sticking to 5.1/7.1 it is then xD ....

 

Although i'm still unsure how to even set all this up once i have it all.

I was actually thinking this may be better as it'd reduce wires and help save space. Rather than having wires all around the room.

Soundbars are perfectly fine for most general consumers, but you wont get great stereo separation nor make good use of the AVR you'll be buying. Do you have room for a pair of towers?

The issue is that i'm currently in University so this is going to be slowly built up over the time i'm here so carting around them speakers would be a pain each year to move. So i think small 5.1 setups are where i'm at, atm.

The Sony STRDN1030, 1040, or 1050 should all work for what you're asking.  Most of Sony's 5.1/7.1 standalone receivers should have enough HDMI inputs for your setup, but the STRDN10xx series just get VERY high reviews considering their low cost:  http://www.whathifi.com/sony/str-dn1030/review

 

These receivers will also do the "Sony Sync" thing, in case that's why you were looking to stay with all Sony (I use the receiver listed above with a Sony TV sync'd).  As for speakers, generally EVERY "Home Theater in a Box" system I've come across has been terrible to mediocre at best.  So for speakers, if you're really committed to having 5 tiny, wall-mounted speakers and a Sub, I'd recommend starting with Parts Express:  http://www.parts-express.com/cat/home-theater-speaker-systems/93?N=18507+4294967118+4294967060+4294967079&Ne=10166&Nrs=collection%28%29%2Frecord%5Bendeca%3Amatches%28.%2C%22P_PortalID%22%2C%221%22%29+and+endeca%3Amatches%28.%2C%22P_Searchable%22%2C%221%22%29%5D&PortalID=1

It looks like you're in the UK.  I'm not sure if there is a UK equivalent for Parts Express, and I'm not trying to waste your time with these links, but these are just suggestions of the type of thing I'd suggest, rather than a "Home Theater in a Box" setup such as most of the above links.

You don't need 2 amplifiers, do you?  The Sony BDV-E2100 says it includes a 1000 watt amp to run all the speakers, so you won't need the Sony STR-DN850.  If you check the Sony STR-DN1040, however, you'll find that you don't need a splitter with it, it already has 8 HDMI inputs and 2 seperate HDMI outputs (you can switch between TV and monitor using a remote control.)  If you ABSOLUTELY MUST have a "Home Theater in a Box" setup for your speakers, you could easily pair the Sony Str-DN1040 with something like this 99 pound package from Sony:  http://www.amazon.co.uk/Sony-DAVTZ140-5-1ch-Cinema-System/dp/B0074ZRNAY/ref=sr_1_9?ie=UTF8&qid=1424138062&sr=8-9&keywords=Sony+home+theater 

In this setup, there is no need for a splitter, you can just plug everything, including the speakers, into the Sony STR-DN1040.  Also, you can throw away/sell the cheap amp that comes with the Sony DAVTZ140 package, unless you prefer to play BluRays through it, instead of your PS4.
