So I was wondering where HWmonitor was getting my drive temp info. Is it from internal temp probes in the SSD and HDD?

All modern drives have integrated temperature sensors. The S.M.A.R.T. status includes a report of the temperature and all drives have recommended operational and storage temps which you can find in the drive's specification sheet :)
