Would they work for Corsair fans?

yes.

Just make sure to get a PWM fan hub if you have PWM fans.

Why would they do that?

Fans attached directly to the power supply's rail will run at full speed. You need a resistor to lower the speed. if you plug the fan into a motherboard header with DC control, then you can start doing adjusting, but fans undervolt better with PWM.

Why would they do that?

Cables from your power supply will always supply a certain amount of voltage, and Molex and SATA always supplies 12v. 12v is the maximum all fans on the market can take, which will result in them running at full speed. Your motherboard controls voltages delivered to the fans, and all components (like SSD's and HDD's) directly attached to the PSU can control the voltage themselves as well. Fans however are made so that they can be driven by how much volt they get, and can not decide for themselves how much they need.

And trust me, Corsair fans are among those that you don't want running at full speed.
