Pretty straight forward.

Can I just simply create a Raid 0 from two drives, install windows in it and then lately use the disk management in Windows to make two partitions out of the same raid array? As if it were one single drive.

 

Do I have to get some fancy software or RAID just treates two drives (internally) as if it were one and allows everything to see it as such?

Yups. Any RAID array once its created is a virtual single disk you can do to it what you'd do to a one drive non-RAID setup.

I roll with sigs off so I have no idea what you're advertising.

The caveat is both drives should be as similar as possible.  For example if you have a 256 and a 512 GB drive, doing a raid 0 wouldn't work so well as you would LOSE storage space.  If you have two 1 TB drives but one is an SSD and the other is a HDD, this two would be bad.  But if you had two 256GB SSDs from different manufacturers, where one was a 256 the other actually had 240GB available it would work and you wouldn't lose much storage.
