General rule of thumb is 1 x 120mm rad for a cpu/gpu block so in terms of cooling a cpu and a gpu the 360 should be fine but not exactly overkill.

 

EDIT:

I misread your parts list, could you tell me what cpu you will be cooling? a 360 rad for a FX 8350 isn't overkill at all if you intend to seriously overclock it, I have no experience with intel cpus but my FX 8350 has a 120 and a 240 and is soon heats up that coolant!  :D
