I can afford a Crucial MX100 256GB for my new build I'm getting later this year. I plan to put the Windows 8.1 OS and maybe some games, would it be easy to add another SSD at a later time, say a 480GB Samsung 850 Pro next year? I'm guessing it's just an exchange of cables but would like reassurance.

Thanks

Upcoming build: 4790k OC @ 4.6Ghz, Dual MSI 980 Twin Frozr V, 16 GB Vengeance Pro 2133Mhz RAM, 760T Corsair Case w/ Razer Blackwidow Chroma

Well you can add a bigger SSD later but it's not a simple case of "switching cables" or coping stuff across really. You can clone the smaller one to the larger one if you must but really it's better to do a fresh install if you can.

Say if I kept the OS on the smaller SSD and used the larger one for games and important files?

That's what I do, although I do wish I'd used my velociraptor instead. I find SSDs to be finnicky things. That's besides the point though - yes, you can add a larger SSD later and just put games etc. on it whilst keeping the OS on the smaller one :)

Aha. Would you rate the Crucial MX100 well? Either that or some Sandisk SSD, but I've heard the Crucial is good for price/performance.

No experience with either, all my SSDs have been Kingston or OCZ (hint, don't buy anything from OCZ).

My boot drive is a Crucial MX100 128GB drive, and so far I'm really happy with it

Haha, will do! (or will don't if someone was being pedantic)
