x99 is a waste of money for gaming you will get one more frame at most, just stick to z97

What's best chipset to build a gaming pc? I've thinking of new LGA2011-v3 x99, or is it beter get LGA1150 z97? I also need to edit some videos.

In my opinion, it would all depend on budget at this point. The LGA1150 is generally cheaper to build with, but with LGA2011-v3 you get the option of a massively powerful i7 or a Xeon. Now z97 and x99 both have the same new, modern feature sets such as m.2. With x99 you can get more pcie lanes, however I never found z97 lacking. If your budget can support it, I would definitely go for LGA2011 - v3 and X99 because it offers more future upgradability, however if you would like to save some money z97 is not lacking at all and I love my z97 rig!

H97 if you aren't overclocking.

Z97 if you are

X99 if you're in need of serious bragging rights and have money to burn.

I think that is the best and most accurate description of the platforms I have heard to date!

My budget is about 4500€ (5700 USD). And it holds full custom liquid cooling for CPU and GPU (600€ / 760 USD). And for price comparison: Asus GeForce GTX 980 4GB cost 610€ (770 USD) and Asus GeForce GTX Titan Black 6GB cost 950€ (1200 USD)

 

Well there's no doubt you can afford X99, however unless you're doing heavy workstation-type tasks that are CPU intensive (e.g. rendering) then you really don't need it. I've noticed you say that you need to "edit some videos" which X99 would help to do faster however it depends on what resolution you're editing, how often you're editing, and how crucial it is to you that you edit quickly. Z97 + i7 4790k is perfectly adequate for video editing, just X99 + LGA 2011-3 CPU will do it faster.

 

EDIT: Also I'd go for a GTX 980 (or 2).

For that budget, I'd go 4790k, Maximus VII Formula and 3 way GTX 970  (unless you can manage 3 way GTX 980 :P )
