Everything looks solid, but I'd go for the WD black HDD as the red is mainly for NAS

Also I'd prefer to spend a bit more on an H100i CPU cooler instead of H80

My current rig for entertainment/gaming: i5 4570 3,2GHz; MSI B85M-E45; ZOTAC GTX760 AMP!; 8GB (2x4GB) by Kingston; Seagate Barracuda 1TB 7200rpm; Corsair 200R, Corsair VS650; Dell U2312HM, Samsung DVD R/W optical drive; CM Devastator; Corsair MM400 gaming pad

You should overclock when it's necessary to lengthen the time your system will be able to maintain high settings/framerates in modern games and future releases. That system won't need to be overclocked for some time. That being said the motherboard and power supply are overkill and it would be better to get a 240mm AIO instead of a 120mm AIO. In addition RED drives are meant for NAS usage and while you can use them just fine something like a barracuda or a WD blue might be cheaper.

I agree with this, either a WD Blue or black would be better. There's no point in the H80 since it's minimally cheaper than the H100.

Specs are on my profile page

Hey @JoshTBG. About the HDD I'm with the guys from the community. If you plan on running most of your demanding programs/games from the SSD, a WD Blue drive might suit you better or a WD Green if you're set on 2TB, because for now the WD Blue goes up to 1TB. But if you need high performance from your HDD - the WD Black is the way to go. It depends solely on your needs and budget. I wouldn't recommend the WD Red, for general usage as their main purpose is NAS systems as @Lord Pantaloons correctly mentioned. Here are some links where you can find more about the drives and pick the one you think best fits your configuration:
WD Blue: http://www.wdc.com/en/products/products.aspx?id=770
WD Green: http://www.wdc.com/en/products/products.aspx?id=780
WD Black: http://www.wdc.com/en/products/products.aspx?id=760
Hope that helps.

Whats NAS?

Sorry @RockiLocky, I saw your post right after I posted mine. NAS means network-attached storage. Basically NAS devices are servers which are dedicated to file sharing with massive storage capacities, with hard drives connected in a RAID system. And here's some info on RAID: http://www.tomshardware.co.uk/answers/id-1856981/raid.html
