I can't turn my saturation up?

Have you read the manual?

The monitor I have is a BenQ GL2450HM and in the display settings on the monitor I cannot use the Saturation function at all, it is just blacked out and I can't use it, any ideas?

Usually it depends on what settings you've got the monitor set to in the OSD to whether or not you can access various other settings (like saturation). ;)
