If I were to run out of room to install any more hard drives in my computer and get an external hard drive bay, how would it connect to my computer? I don't want a NAS system, just want an external hard drive bay to be connected to my computer via a wire(s), but what wires?

You can just buy external hard drives that connect via usb, but if you already own the hard drives and they are internal ones then you could buy this:

Ah, ok so with that, would it be ideal to buy something like a drive bay to house the hard drives in, then connect the hard drives to the thing you linked?

also, would that be a similar speed to mounted internal hard drives?

It would be fast enough for mechanical hard drives, but SSDs would probably be bottle necked. You could also just buy a adapter cable or a hard drive enclosure:
