ubuntu22 probably means it targets Ubuntu libs while the other probably targets more upstream ones. Mint being based on Ubuntu you may need the ubuntu22 build. Ubuntu often gets separate builds due to versioning differences between distros.

With that said using a install script isn't really recommended for installing something.

I recommend using an ad-blocker to visit the links below with the exception of the Flatpak link.
I would consider RetroArch which has the Mupen64Plus Core (Mupen64Plus-Next). RetroArch is available as a FlatPak on FlatHub and should be readily available in Mints software store. Cores can be installed with it's Online Updater, https://www.retroarch.com/?page=cores.
