hi there! I don't know if a mini pc is a requirement for you, but then again, I would recommend using an older PC that you have, if they are still strong enough (a modern-ish cpu that is made in the last 5 years / 10 years), some known good RAM with enough capacity (around 32GB should be a lot more than enough, unless you're running multiple game servers at once), and a GPU maybe, a smaller one is okay as well, if your requirement isn't that much. And spend the rest of the money on a good power supply, and some good networking! (for hosting a server, a good internet, using a good internet provider goes a long way!)

But if you really want a mini pc, I would suggest buying one with a replaceable everything, CPU, RAM, Power Supply, etc.

Here are a few suggestions:

Minecraft in particular likes alot of ram, as mentioned above alot of modern systems will probably be fine to make a dedicated server box, but i would suggest getting one with replaceable ram.

I'm really only looking mini pc so it doesn't take up much space or huge fan noise. I have a old atx build (1700x, RTC 2080 super and 32gb ram) but would be loud considering it'll be in my bedroom.
