If you keep the games basic, so eSports titles and AAA games older than 2020, the R5 5500 and RX 580 SP2048 can give a decent experience. You can expect to be able to reach around 150fps at competitive settings in games like CS2, Fortnite, Rocket League, DotA 2, and the like. For AAA games, you can expect 60fps for older titles at Medium-ish settings - games like Control, Cyberpunk 2077, and Death Stranding. Since the card has 8GB of VRAM, you should at least be able to turn up textures in those games, which will make them look a lot better without costing much performance.

 

AAA games from 2020 and newer - those intended for the PS5 and Xbox Series X/S - are where you'll struggle. Those games generally require more GPU horsepower than the RX 580 can bring, and often struggle with 8GB of VRAM.

 

But as long as you keep your expectations in check, you can have a decent experience, yes.

My last build was in the Athlon days in the late 90s. Will this setup at least do some 1080p gaming? Is it at least relatively fast?

the rx580 altho beeing a older gpu is still usable for 1080p i whould proberly go with a cheaper mobo like the msi b550 a pro but that will work well i used to game at 1440p on a 580 i whould proberly change out the psu

For how long? Possibly not very. 

I would not recommend that power supply. it might be one of the worst in recent years.
