Budget (including currency): 7500 NOK

Country: Norway

My parents and a few neighbours are considering building a communal LAN around the family cabin.

There is very poor cell reception so we are concidering getting a Starlink subscription and splitting it between the houses.

I was thinking we might be able to solve this with a PoE switch and a few access points, but one cabin is a bit to far away to reach with that sollution.

I need some help to find appropriate gear for sharing the internet connection over the area, see attached picture for map.

Okay, so, this is in USD because I can't be bothered to learn where to shop in Norway and it's all commodity hardware so you should know what the markup will be finding it in your area

First, do you need to put everyone on separate VLANs for privacy or are you fine with all being able to see each other. If you need VLANs, you're gonna need a router with some features. 100$ should be fine. Otherwise, you can all be one big happy family network.
Assuming you have your router stuff figured out, next is our Core Switch. I am seeing 1/10Gb SFP+ 8 port switches for under 150. Then you're gonna want to do fiber runs to each cabin (chaining them is possible, but less ideal. Fiber's cheap) and you'll want a combo switch in each unit. You can find these for under 100
Then, if you need wifi, you can just plug a wireless access point into the switch, set it up, and run any hardlines you need inside the cabin as normal

The easiest thing that comes to mind is splashing out on some Ubiquiti hardware. A Ubi Dream Machine/Pro is spendy, but it'll make setup easy, especially if you grab some used U6 Lites for access points.

That's my rec
