In the BOINC client settings, you can limit how many percent of the CPU the software is allowed to use, which I've set to 40%, to only utilize the CPU cores on my Apple Silicon Mac.

 

And this works for all projects, except PrimeGrid, which just continues to utilize almost 100% of my CPU.

 

Does anybody know how to fix this?

I see you posted this on PrimeGrid's forums already. You're more likely to get a better answer there. I don't have a Mac so don't know how that differs from Windows, but it works in Windows. I know that doesn't help you!
