I build pcs and have ran into a problem with the same pc over the last year over and over , it has a 7800gpu in it and is running 3 monitors and every now and again it just loses 2 monitors and shuts off and restarts with one monitor, if I uninstall Radeon drivers and reinstall it's fine , could be a month or two or the next day it happens , what is going on

Sounds like an unstable system, and to make sure you don't sleep at night, it could be not only the GPU, but the RAM and CPU as well.

For starters, I'd lower the overclock on all 3 parts by a little bit. Then if possible, make a clean OS install (when was the last time you did that?) to make sure you don't have any random corruption from said unstable system. See if that helps.

i dont recall wesley* saying anything was overclocked.  if that is the case yes your right BUT on restart your gpu goes back to default settings if your using afterburner or whatever to overclock your GPU.  not sure about the radeon software though... personally i have a 4090 that i use only with my samsung G9 and a 6700xt that i use for my other 2 curved 16:9 displays

its a pretty sweet setup!  got the G9 for a steal, one of the curved screens i was using prior (too much ghosting, it sucks), and just so happened my dad out of the blue MAILED me the other monitor and sure as crap, its identical to the one i have!  what are the chances?!

i had this exact issue with my 6700 and my 4090.  fixed it by installing the chipset drivers for my motherboard, updating drivers, so on and so forth.  although for the last few months (forget when it started) my monitors dont turn off after 15 minutes as setup in "power options".  id really hate to get some burn in on any of my screens so yeah, a fresh windows install is coming in the near future

if you ARE overclocking your cpu\ram, have you messed with the bclk?  if so leave it at 100.00!  i have played with it quite a few times and it messes with the pci lanes (not nvme lanes, or maybe i didnt notice), usb functionality, and most of all the SATA drives.  the last time i messed with my bclk i had it at 100.25 or 100.5 - whichever gave me a nice whole number for my fclk.  anyway that seriously fudged up my sata RAID setup.  i have 8 drives installed on sata, 6 of which are raid 10, so ~3tb of installed games just vanished!  yeah it was f*ing dumb

i set it back to 100.00 and still, windows wouldnt recognize the array.  had to use some drive recovery BS app to get the array working again, amd's raidxpert2 didnt do sh** except tell me a drive was offline, which it wasnt.

but yeah update all your drivers man.  especially your BIOS, lots of ppl forget about that one for some reason.  figure it this way, if your drivers are newer than your bios (assuming its still on the out-the-box bios or is on a bios from idk 8 years ago), its easy to understand why youd have issues.  in my experience with repairing\troubleshooting friends pc's, i ALWAYS ALWAYS update the bios first then do the hardware drivers.  why?  cause chances are they're using the same bios version the pc\laptop came with.  about 80% of the time thats all i gotta do to fix issues

have you tried (forget the name) the software that completely removes your amd\nvidia video card drivers?  if not give that a go and make sure to follow the instructions!  including running it in safe mode on step "whichever one".
from there install the latest amd video card driver, then itll legit be a "fresh and clean" install - really hope that solves the problem.

aside from that, have you updated your CHIPSET drivers?  only asking cause its a simple thing to overlook.  if not obv head to intel or amd's site (based on cpu), then download em based off what type of motherboard you have.  for example i have a x570, so of course i select x570.

one other thing to consider, in device management (i keep a link to computer management on my taskbar cause its got all that stuff in one), do your monitors show up?  well, meaning not "PnP display" or whatever windows defaults as rather than, idk, "msi x32v123xyz" (made that up).  if no, of course install the drivers for the monitors.  from there - and this i personally have noticed, sometimes windows display settings gets all stupid and thinks idk monitor 1 is PnP even though you installed the drivers.  so double check in display settings that each monitor is assigned to its proper driver, not PnP display.

the last i just mentioned happens to me frequently and im not exactly sure why.  maybe cause i mess around in BIOS and jack things up like the BCLK story above.  anywho yeah i have a G9 on my 4090, an asus 32" and an msi 32" on my 6700xt.  every once and a while monitor X in display settings will report that its a PnP monitor even if device manager has the msi\asus\g9 listed.

not that this would be related but my G9 does have a specific usb port on it for firmware updates.  i dont think my asus or msi do, perhaps check on yours if theres an update there?

also one last thing and i know this sounds like a newbie joke or whatever but, check ur power connections.  only say that cause i have old screens that take the PSU type cable, but the new ones have the laptop charger type connections (assuming it isnt usb-c powered) and they might be loose?  possibly your feet are kicking the cords (DP/HDMI/power) and knocking the monitor off?

finally if all else fails, possibly RMA your gpu?  ive never experienced an issue like yours aside from the bclk story i had mentioned, that being said if my bclk is idk 101 or something, on occasion my top/best pci slot wont display output on my 4090/G9 upon boot.

really racking my head over this one...

I have done all that I could and all the suggestions. It happened again last night so now we through a 7600 in it and playing it to see if it happens again , already placed the order for a new gpu, so if it fails with this other card in it I will just return the ordered card,  I will keep yall updated
